The farmers predict that we may receive the following this week: Lettuce Heads, Garlic and Garlic Scapes, Tomatoes, Basil, Scallions, Cilantro, Carrots, and Cucumbers. It’s easy to toss together a tasty salad of lettuce, tomatoes, scallions, carrots, and cucumbers, but why not serve the tomatoes sliced with chiffonade (thinly sliced – or you can chop) basil and a mild cheese such as the farm’s chevre or feta? If you ate all the cheese you received last week, chop the tomatoes and cucumbers with cilantro and scallions for a quick salsa. The weather is supposed to get hot again this week, these cool salads will be welcome on your table! Or make garlic scapes pesto (the recipe has been posted previous weeks) and spread on crusty bread, top with a thin slice of tomato, and serve as open-faced sandwiches.
